Cooking Methods and Dishes

With the basic grill set you can grill on direct heat for dishes like meat on skewers, steaks, burgers and chicken wings that cook in under 20 minutes. You can also grill on indirect heat using a deflector for larger dishes such as chicken, ham and chops. The grill is suitable for smoking ribs, cheese and pulled pork, and can be used to make soups, pilaf and stews.

What is Kamado?

The name KAMADO is a Japanese word for "stove", and literally means "a place for a boiling pot". The word is now used to refer to all similar types of ceramic barbecue grills.

Historical Origins

Historians state that people were already using wooden vessels for cooking in ancient times, with remnants of this ancient dishware discovered in every corner of the world. Some of the oldest clay pots, which are more than 3000 years old, were found in China. These round clay pots are believed to be ancestors of the modern KAMADO barbecue grill.

Throughout history, people developed these simple clay pots for cooking various dishes in different ways. Indians began to use clay ovens called a tandoor, while the Japanese called them mushikamado, a stove to steam rice used in Japanese families during special ceremonies. Mushikamado is a round clay pot with a domed lid and was most common in Southern Japan. In ancient times the Japanese developed it further to regulate evaporating temperature by perfecting the design of air dampers and began to use charcoal instead of wood. Mushikamado came to the attention of Americans after World War II.

Materials and Construction

Modern KAMADO barbecue grills are made of various materials such as heat-resistant ceramics and other heat-resistant materials, as well as terracotta - a traditional porous baked ceramic made of natural clay, Portland cement or a mixture of milled lava rock. The surface of the barbecue grill can vary greatly, and can be coated with glossy ceramic glaze, paint, decorative textured plaster or ceramic mosaic. Modern ceramics and fire-resistant materials protect barbecue grills from cracking.

Fuel and Charcoal

KAMADO Bono Limited barbecue grill is fired with charcoal. Wood charcoal does not leave a lot of ash, and unlike charcoal briquettes does not have impurities that can change and distort the taste of cooked food. Charcoal can be manufactured in an environmentally-friendly manner using the coppicing technique. Most importantly, food baked using lump charcoal has a natural campfire aroma.

Temperature Control and Cooking Capabilities

The ceramic barbecue grill design allows keeping the heat and reaching temperatures up to 400°C. Using KAMADO barbecue grills you can adjust airflow and temperature in a precise manner, making them very similar to wood-fired ovens and allowing you to roast and bake food in the same manner as you would in a regular oven. KAMADO barbecue grills are designed not only for meat grilling or smoking but can also be used to bake pizza, cookies, pies and bread.

Grill Components and Design

KAMADO Bono Limited barbecue grill has a ceramic frame with a firebox inside - a ceramic tank for charcoal. The bottom part of the structure has an air vent, through which airflow enters the firebox. The domed lid of the grill has another adjustable air vent, through which airflow goes out. The vents are used to regulate the cooking temperature. Barbecue grids are placed over the fire to place steaks on them. The lid also has an opening for placing a thermometer to measure the temperature of grilled food.
